Ingredients
- 1 lb lamb, cubed
- 4 potatoes, peeled and sliced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup chicken broth
- 1/2 cup white wine
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the lamb and cook until browned on all sides.
- Add the onion and garlic to the skillet and cook until softened.
- Pour in the white wine and cook for 2 minutes to reduce slightly.
- Add the chicken broth, potatoes, salt, and pepper. Stir to combine.
- Transfer the mixture to a casserole dish and cover with foil.
- Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until the potatoes are golden and the lamb is tender.
