Ingredients

  • 2 ripe bananas, mashed
  • 1 cup grated sweet potato
  • 1 cup grated pumpkin
  • 1 cup grated coconut
  • 1/2 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup coconut milk
  • 1/2 cup milk

Instructions

  1. In a large bowl, combine the mashed bananas, grated sweet potato, grated pumpkin, grated coconut, sugar, cinnamon, cloves, and salt.
  2. Gradually stir in the coconut milk and regular milk until well combined.
  3. Pour the mixture into a greased baking dish and smooth the top.
  4. Cover the dish with foil and steam on the stovetop for 30 minutes, or until the pudding is set.
  5. Let the pudding cool before serving.
