Poffert Pancake Skewers

Ingredients

  • 1 cup all-purpose flour

  • 1 cup milk

  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a poffertjes pan or a non-stick skillet over medium heat and lightly grease with butter.
  5. Pour small amounts of batter into the pan to make mini pancakes.
  6. Cook for 1-2 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  7. Thread the mini pancakes, banana slices, and strawberries onto skewers.
