Ingredients

  • 12 rice paper wrappers
  • 1 cup cooked vermicelli noodles
  • 1 cup shredded lettuce
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 12 large cooked shrimp, peeled and deveined (optional for vegetarian version)
  • 12 slices firm tofu, about 1/4 inch thick (optional for non-vegetarian version)
  • Warm water for soaking rice paper

Instructions

  1. Prepare all the ingredients and arrange them in separate bowls for easy assembly.
  2. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds to soften.
  3. Place the softened rice paper on a clean, damp kitchen towel.
  4. Layer a small amount of vermicelli noodles, lettuce, carrots, bean sprouts, mint, and cilantro in the center of the rice paper.
  5. If using shrimp or tofu, place one piece on top of the vegetable mixture.
  6. Roll the rice paper over the filling, tucking in the sides as you go, and continue to roll into a tight cylinder.
  7. Repeat with the remaining ingredients.
  8. Serve the spring rolls with a dipping sauce of your choice.
