Poha Chivda (पोहा चिवडा)

Ingredients

  • 2 cups poha (flattened rice)
  • 1/4 cup peanuts
  • 1/4 cup cashews
  • 1/4 cup raisins
  • 1/4 cup dried coconut slices
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 8-10 curry leaves
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • 1 tablespoon powdered sugar

Instructions

  1. Rinse the poha in a colander and let it sit for 10 minutes to soften.
  2. Heat oil in a pan and fry the peanuts, cashews, raisins, and coconut slices until they are golden brown. Remove and set aside.
  3. In the same pan, add mustard seeds and curry leaves. Once the seeds start to splutter, add turmeric powder, red chili powder, and salt.
  4. Add the softened poha to the pan and mix well. Cook for 2-3 minutes until the poha is heated through.
  5. Add the fried nuts and coconut, and sprinkle powdered sugar. Mix everything together and cook for another 2-3 minutes.
  6. Remove from heat and let it cool completely before storing in an airtight container.
