Poha Chivda (पोहा चिवडा)

Ingredients
- 2 cups poha (flattened rice)
- 1/4 cup peanuts
- 1/4 cup cashews
- 1/4 cup raisins
- 1/4 cup dried coconut slices
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 8-10 curry leaves
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
- 1 tablespoon powdered sugar
Instructions
- Rinse the poha in a colander and let it sit for 10 minutes to soften.
- Heat oil in a pan and fry the peanuts, cashews, raisins, and coconut slices until they are golden brown. Remove and set aside.
- In the same pan, add mustard seeds and curry leaves. Once the seeds start to splutter, add turmeric powder, red chili powder, and salt.
- Add the softened poha to the pan and mix well. Cook for 2-3 minutes until the poha is heated through.
- Add the fried nuts and coconut, and sprinkle powdered sugar. Mix everything together and cook for another 2-3 minutes.
- Remove from heat and let it cool completely before storing in an airtight container.
