Ingredients
- 1 lb fresh prawns, peeled and deveined
- 2 tbsp coconut oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 red chili, finely chopped
- 1 tbsp curry powder
- 1 can (14 oz) coconut milk
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat coconut oil in a large pan over medium heat. Add the chopped onion, minced garlic, grated ginger, and chopped red chili. Sauté for 2-3 minutes until the onions are soft and translucent.
- Add the curry powder to the pan and cook for another minute to toast the spices.
- Pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine all the ingredients.
- Bring the curry to a gentle simmer and add the prawns. Cook for 5-7 minutes until the prawns are pink and cooked through.
- Season with salt to taste and garnish with fresh cilantro.
