Pohnpeian Prawn Curry

Ingredients

  • 1 lb fresh prawns, peeled and deveined
  • 2 tbsp coconut oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 red chili, finely chopped
  • 1 tbsp curry powder
  • 1 can (14 oz) coconut milk
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a large pan over medium heat. Add the chopped onion, minced garlic, grated ginger, and chopped red chili. Sauté for 2-3 minutes until the onions are soft and translucent.
  2. Add the curry powder to the pan and cook for another minute to toast the spices.
  3. Pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine all the ingredients.
  4. Bring the curry to a gentle simmer and add the prawns. Cook for 5-7 minutes until the prawns are pink and cooked through.
  5. Season with salt to taste and garnish with fresh cilantro.
