Ingredients

  • 1 cup poi poi
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 cup milk
  • 2 tbsp sugar
  • 2 tbsp butter, melted

Instructions

  1. In a bowl, mix the poi poi, flour, baking powder, and salt.
  2. In another bowl, beat the egg and mix in the milk, sugar, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a non-stick pan over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve hot with your favorite toppings.
