Ingredients
- 1 cup poi poi
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1 cup milk
- 2 tbsp sugar
- 2 tbsp butter, melted
Instructions
- In a bowl, mix the poi poi, flour, baking powder, and salt.
- In another bowl, beat the egg and mix in the milk, sugar, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Heat a non-stick pan over medium heat and pour 1/4 cup of batter for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve hot with your favorite toppings.
