Poi Poi (taro Fritters With Coconut Aioli)

Ingredients
- 2 cups grated taro
- 1/2 cup all-purpose flour
- 1/4 cup coconut milk
- 1/4 cup chopped spring onions
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil for frying
- 1/2 cup mayonnaise
- 2 tablespoons coconut cream
- 1 tablespoon lime juice
- 1 clove garlic, minced
- Salt to taste
Instructions
- In a large bowl, combine grated taro, flour, coconut milk, chopped spring onions, salt, and black pepper. Mix until well combined.
- Heat vegetable oil in a frying pan over medium heat. Drop spoonfuls of the taro mixture into the hot oil and flatten with the back of the spoon to form fritters. Fry until golden brown on both sides, about 3-4 minutes per side. Remove from the pan and drain on paper towels.
- In a small bowl, whisk together mayonnaise, coconut cream, lime juice, minced garlic, and salt to make the coconut aioli.
- Serve the taro fritters with the coconut aioli on the side for dipping.
