Ingredients
- 2 cups taro, peeled and diced
- 1 can (14 oz) coconut milk
- 1/2 cup sugar
- 1/4 teaspoon salt
Instructions
- In a pot, bring the diced taro and coconut milk to a boil over medium heat.
- Reduce the heat to low and let it simmer for 20-25 minutes, or until the taro is soft.
- Add sugar and salt, then continue to cook for another 5 minutes, stirring occasionally.
- Remove from heat and let it cool for a few minutes.
- Transfer the mixture to a blender and blend until smooth.
- Pour the pudding into serving bowls and refrigerate for at least 2 hours before serving.
