Ingredients

  • 2 cups taro, peeled and diced
  • 1 can (14 oz) coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt

Instructions

  1. In a pot, bring the diced taro and coconut milk to a boil over medium heat.
  2. Reduce the heat to low and let it simmer for 20-25 minutes, or until the taro is soft.
  3. Add sugar and salt, then continue to cook for another 5 minutes, stirring occasionally.
  4. Remove from heat and let it cool for a few minutes.
  5. Transfer the mixture to a blender and blend until smooth.
  6. Pour the pudding into serving bowls and refrigerate for at least 2 hours before serving.
