Poi (taro Fritters)

Ingredients
- 2 cups grated taro
- 1/2 cup all-purpose flour
- 1/4 cup coconut milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
Instructions
- In a large bowl, combine the grated taro, flour, coconut milk, salt, and black pepper. Mix until well combined.
- Heat oil in a frying pan over medium heat.
- Scoop spoonfuls of the taro mixture and carefully drop them into the hot oil.
- Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the oil and place them on a paper towel to drain any excess oil.
- Serve the taro fritters hot and enjoy!
