Ingredients
- 4 whole snappers, cleaned and scaled
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup vegetable oil
- 2 onions, finely chopped
- 4 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1 cup fish or vegetable stock
- Salt and pepper to taste
Instructions
- In a shallow dish, mix the flour, salt, and black pepper. Dredge the snappers in the seasoned flour, shaking off any excess.
- Heat the vegetable oil in a large skillet over medium-high heat. Fry the snappers for 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and set aside.
- In the same skillet, sauté the onions until translucent. Add the tomatoes, garlic, paprika, and thyme. Cook for 5 minutes, stirring occasionally.
- Pour in the fish or vegetable stock and bring to a simmer. Season with salt and pepper to taste.
- Return the fried snappers to the skillet, spooning the tomato sauce over them. Cover and simmer for an additional 10 minutes.
- Serve the Poisson Rouge hot, accompanied by steamed rice or boiled yams.
