Ingredients

  • 4 whole snappers, cleaned and scaled
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 2 onions, finely chopped
  • 4 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1 cup fish or vegetable stock
  • Salt and pepper to taste

Instructions

  1. In a shallow dish, mix the flour, salt, and black pepper. Dredge the snappers in the seasoned flour, shaking off any excess.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Fry the snappers for 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and set aside.
  3. In the same skillet, sauté the onions until translucent. Add the tomatoes, garlic, paprika, and thyme. Cook for 5 minutes, stirring occasionally.
  4. Pour in the fish or vegetable stock and bring to a simmer. Season with salt and pepper to taste.
  5. Return the fried snappers to the skillet, spooning the tomato sauce over them. Cover and simmer for an additional 10 minutes.
