Ingredients
- 1 bunch of fresh poleo mint
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 potato, diced
- Salt and pepper to taste

Instructions
- Heat a drizzle of olive oil in a pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until softened.
- Add the diced potato and vegetable broth to the pot.
- Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
- Stir in the fresh poleo mint and let it simmer for an additional 5 minutes.
- Season with salt and pepper to taste.

- Return the pot to the stove and reheat the soup if necessary.
- Serve the poleo mint soup hot, garnished with a sprig of fresh mint.
