Poleo Mint Soup (sopa De Poleo)

Ingredients

  • 1 bunch of fresh poleo mint
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 potato, diced
  • Salt and pepper to taste
  • Extra virgin olive oil

Instructions

  1. Heat a drizzle of olive oil in a pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened.
  3. Add the diced potato and vegetable broth to the pot.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
  5. Stir in the fresh poleo mint and let it simmer for an additional 5 minutes.
  6. Season with salt and pepper to taste.
  7. Remove the pot from the heat and let the soup cool slightly.
  8. Using an immersion blender, blend the soup until smooth.
  9. Return the pot to the stove and reheat the soup if necessary.
  10. Serve the poleo mint soup hot, garnished with a sprig of fresh mint.
