Ingredients
- 1 whole chicken, cut into pieces
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 onion, peeled and halved
- 2 garlic cloves, smashed
- 1 bay leaf
- 8 cups water
- Salt and pepper to taste
- 8 oz egg noodles
- Fresh parsley for garnish
Instructions
- In a large pot, combine the chicken pieces, carrots, celery, onion, garlic, bay leaf, and water. Season with salt and pepper.
- Bring the pot to a boil, then reduce the heat and simmer for 1.5 hours, skimming off any foam that rises to the surface.
- Remove the chicken pieces and set aside to cool. Strain the broth and return it to the pot.
- Add the egg noodles to the broth and cook for 8-10 minutes, or until tender.
- While the noodles are cooking, shred the chicken meat and discard the bones and skin.
- Return the shredded chicken to the pot and heat through. Adjust the seasoning if needed.
- Serve the soup hot, garnished with fresh parsley.
