Ingredients

  • 1 whole chicken, cut into pieces
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 onion, peeled and halved
  • 2 garlic cloves, smashed
  • 1 bay leaf
  • 8 cups water
  • Salt and pepper to taste
  • 8 oz egg noodles
  • Fresh parsley for garnish

Instructions

  1. In a large pot, combine the chicken pieces, carrots, celery, onion, garlic, bay leaf, and water. Season with salt and pepper.
  2. Bring the pot to a boil, then reduce the heat and simmer for 1.5 hours, skimming off any foam that rises to the surface.
  3. Remove the chicken pieces and set aside to cool. Strain the broth and return it to the pot.
  4. Add the egg noodles to the broth and cook for 8-10 minutes, or until tender.
  5. While the noodles are cooking, shred the chicken meat and discard the bones and skin.
  6. Return the shredded chicken to the pot and heat through. Adjust the seasoning if needed.
  7. Serve the soup hot, garnished with fresh parsley.
