Ingredients
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon

- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup honey
- 2 large eggs

- 1/4 cup strong brewed coffee, cooled
- 1/4 cup dark rum (optional)
- 1/2 cup chopped nuts (walnuts or almonds)
- 1/4 cup raisins
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a bowl, whisk together the flour, baking soda, cinnamon, cloves, nutmeg, and ginger.
- In a separate large bowl, cream the butter and sugar until light and fluffy. Beat in the honey, then the eggs, one at a time.
- Stir the flour mixture into the wet ingredients alternately with the sour cream. Mix in the coffee and rum. Fold in the nuts and raisins.
- Pour the batter into the prepared pan and spread it out evenly.
- Bake for 35 to 40 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan on a wire rack. Once cooled, dust with powdered sugar before serving.
