Ingredients
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 cup warm water
- 1 tablespoon olive oil
- 1 pound mushrooms, finely chopped
- 1 large onion, finely chopped
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large bowl, mix the flour and salt. Gradually add the warm water and olive oil, kneading until a smooth dough forms. Cover and let rest for 30 minutes.
- In a skillet, melt the butter over medium heat. Add the chopped mushrooms and onions, and sauté until the mixture is golden brown. Season with salt and pepper. Remove from heat and let cool.
- Roll out the dough on a floured surface and cut out circles using a glass or cookie cutter. Place a spoonful of the mushroom filling in the center of each circle, then fold the dough over and seal the edges.
- Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 5 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
- Optional: Pan-fry the cooked pierogi in butter until golden and crispy.
