Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 kg fresh plums, pitted and halved
  • 1/4 cup granulated sugar (for sprinkling)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the flour, 1/2 cup sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Beat the egg and vanilla extract together, then add to the flour mixture. Mix until a dough forms.
  4. Press the dough into the bottom of the prepared baking dish.
  5. Arrange the plum halves over the dough, then sprinkle with the remaining 1/4 cup of sugar.
  6. Bake in the preheated oven for 45-50 minutes, or until the crust is golden and the plums are tender.
  7. Allow the cake to cool before serving.
