Polish Plum Pierogi: Pierogi Z Sliwkami

Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup sour cream
- 1/4 cup water
- 1 pound plums, pitted and chopped
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
- 1/4 cup unsalted butter
- 1/2 cup bread crumbs
Instructions
- In a large bowl, mix the flour and salt. In a separate bowl, whisk together the egg, sour cream, and water. Gradually add the wet ingredients to the flour mixture, stirring until a dough forms.
- On a floured surface, knead the dough until smooth. Cover and let rest for 30 minutes.
- In a separate bowl, combine the plums, sugar, cinnamon, and vanilla extract.
- Roll out the dough and cut into circles. Place a spoonful of plum filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
- Bring a large pot of water to a boil. Cook the pierogi in batches for 3-4 minutes, or until they float to the surface.
- In a skillet, melt the butter and add the bread crumbs. Cook until golden brown. Serve the pierogi with the buttered bread crumbs on top.
