Polish Potato Salad: Salatka Ziemniaczana

Ingredients

  • 2 lbs (900g) potatoes, peeled and diced
  • 1 cup (150g) carrots, diced
  • 1 cup (150g) frozen peas, thawed
  • 1/2 cup (75g) pickles, diced
  • 1/2 cup (75g) red onion, finely chopped
  • 1/2 cup (120ml) mayonnaise
  • 2 tablespoons (30ml) Dijon mustard
  • 2 tablespoons (30ml) white vinegar
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes and carrots in a pot of salted water until tender, about 15 minutes. Drain and let cool.
  2. In a large bowl, combine the cooked potatoes, carrots, peas, pickles, and red onion.
  3. In a small bowl, whisk together the mayonnaise, Dijon mustard, and white vinegar. Season with salt and pepper.
  4. Pour the dressing over the potato mixture and gently toss to coat evenly.
