Ingredients
- 2 lbs (900g) potatoes, peeled and diced
- 1 cup (150g) carrots, diced
- 1 cup (150g) frozen peas, thawed
- 1/2 cup (75g) pickles, diced
- 1/2 cup (75g) red onion, finely chopped
- 1/2 cup (120ml) mayonnaise
- 2 tablespoons (30ml) Dijon mustard
- 2 tablespoons (30ml) white vinegar
- Salt and pepper to taste
Instructions
- Boil the potatoes and carrots in a pot of salted water until tender, about 15 minutes. Drain and let cool.
- In a large bowl, combine the cooked potatoes, carrots, peas, pickles, and red onion.
- In a small bowl, whisk together the mayonnaise, Dijon mustard, and white vinegar. Season with salt and pepper.
- Pour the dressing over the potato mixture and gently toss to coat evenly.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld.
