Ingredients

  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the ground beef, cooked rice, onion, garlic, diced tomatoes, paprika, thyme, salt, and pepper.
  4. Stuff the bell peppers with the meat mixture and place them in a baking dish.
  5. Cover the dish with foil and bake for 45 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and the filling is cooked through.
