Polish Stuffed Cabbage Rolls, also known as Golumpki, are a classic comfort food in Polish cuisine. Ingredients
- 1 large head of cabbage
- 1 pound ground pork
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon dried thyme
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes
- 1/4 cup brown sugar
- 2 tablespoons lemon juice
Instructions
- Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head in the boiling water. Cook for about 5 minutes, or until the outer leaves are softened. Remove the cabbage from the water and carefully peel off the softened leaves. Set aside.
- In a large bowl, combine the ground pork, ground beef, cooked rice, onion, garlic, salt, pepper, paprika, and thyme. Mix until well combined.
- Place a spoonful of the meat mixture onto each cabbage leaf, then fold the sides in and roll up the leaf to encase the filling. Place the rolls seam side down in a large pot.
- In a separate bowl, mix together the tomato sauce, diced tomatoes, brown sugar, and lemon juice. Pour the sauce over the cabbage rolls in the pot.
- Cover the pot and simmer the cabbage rolls over low heat for 1.5 to 2 hours, or until the cabbage is tender and the meat is cooked through.
