Ingredients
- 2 cups all-purpose flour

- 1 teaspoon vanilla extract
Instructions
- In a large bowl, mix the flour and salt. In a separate bowl, whisk together the egg, sour cream, and melted butter. Gradually add the wet ingredients to the flour mixture, stirring until a dough forms.
- On a floured surface, knead the dough until smooth. Cover with a kitchen towel and let it rest for 15 minutes.
- In another bowl, mix together the farmer's cheese, powdered sugar, and vanilla extract to make the filling.
- Roll out the dough and cut it into circles using a cookie cutter or a glass. Place a spoonful of the cheese filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
- Bring a large pot of water to a boil. Cook the pierogi in batches for 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and let them drain.
- Serve the pierogi warm, sprinkled with powdered sugar or with a dollop of sour cream.
