Polish Żurek Surprise (Żurek)
Żurek is a traditional Polish soup that is known for its sour and tangy flavor. This recipe for Żurek includes a surprise ingredient that adds a unique twist to this classic dish.
Ingredients
- 1 lb kielbasa sausage, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 1 cup rye flour
- 1 cup sourdough bread, cubed
- 1 cup mushrooms, sliced
- 1 cup sour cream
- 1 bay leaf
- 1 tsp marjoram
- Salt and pepper to taste
Instructions
- In a large pot, sauté the kielbasa, onion, and garlic until the onion is translucent.
- Add the broth, bay leaf, and marjoram to the pot. Bring to a boil, then reduce heat and simmer for 1 hour.
- In a separate bowl, mix the rye flour with 1 cup of water to form a smooth paste. Add this mixture to the pot and stir well.
- Add the sourdough bread and mushrooms to the pot and continue to simmer for another 30 minutes.
- Remove the pot from the heat and stir in the sour cream. Season with salt and pepper to taste.
- Serve the Żurek hot, garnished with fresh herbs if desired.
