Polish Żurek Surprise (Żurek)

Ingredients

  • 1 lb kielbasa sausage, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 cup rye flour
  • 1 cup sourdough bread, cubed
  • 1 cup mushrooms, sliced
  • 1 cup sour cream
  • 1 bay leaf
  • 1 tsp marjoram
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the kielbasa, onion, and garlic until the onion is translucent.
  2. Add the broth, bay leaf, and marjoram to the pot. Bring to a boil, then reduce heat and simmer for 1 hour.
  3. In a separate bowl, mix the rye flour with 1 cup of water to form a smooth paste. Add this mixture to the pot and stir well.
  4. Add the sourdough bread and mushrooms to the pot and continue to simmer for another 30 minutes.
  5. Remove the pot from the heat and stir in the sour cream. Season with salt and pepper to taste.
  6. Serve the Żurek hot, garnished with fresh herbs if desired.
