Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon Spanish paprika
  • 1 cup white wine
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, and Spanish paprika.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
  4. Pour in the white wine and chicken broth, and bring to a simmer. Return the chicken thighs to the skillet.
  5. Cover and cook for 45-50 minutes, or until the chicken is cooked through and the sauce has thickened.
  6. Serve the Pollo a la Gallega hot, garnished with fresh parsley if desired.
