Ingredients
- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon Spanish paprika
- 1 cup white wine
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt, pepper, and Spanish paprika.
- Heat olive oil in a large skillet over medium heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
- Pour in the white wine and chicken broth, and bring to a simmer. Return the chicken thighs to the skillet.
- Cover and cook for 45-50 minutes, or until the chicken is cooked through and the sauce has thickened.
- Serve the Pollo a la Gallega hot, garnished with fresh parsley if desired.
