Pollo Al Limone E Basilico Piccata (lemon Basil Chicken Piccata)
Pollo al Limone e Basilico Piccata, or Lemon Basil Chicken Piccata, is a classic dish from Mantuan cuisine that features tender chicken breast in a flavorful lemon and basil sauce. This dish is perfect for a light and refreshing meal, and it's easy to make at home.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers, drained
- 1/4 cup fresh basil, chopped
- 2 tablespoons unsalted butter
Instructions
- In a shallow dish, mix the flour with salt and pepper. Dredge the chicken breasts in the seasoned flour, shaking off any excess.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Reduce the heat to medium and add the chicken broth, lemon juice, and capers to the skillet. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Stir in the chopped basil and butter, and return the chicken to the skillet. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly and the flavors to meld.
- Serve the chicken piccata hot, garnished with additional basil if desired.
