This rustic and flavorful chicken stew is made with tomatoes, onions, bell peppers, and a variety of aromatic herbs, creating a comforting and satisfying meal that is perfect for any occasion.
Ingredients
- 4 chicken thighs
- 4 chicken drumsticks
- 1 onion, sliced
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/2 cup chicken broth
- 1/2 cup dry white wine

- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Season the chicken thighs and drumsticks with salt and pepper.
- In a large Dutch oven, heat the olive oil over medium-high heat. Brown the chicken pieces on all sides, then remove and set aside.
- Add the sliced onion and bell pepper to the pot and sauté until softened, about 5 minutes.
- Stir in the minced garlic, dried oregano, thyme, and red pepper flakes, and cook for another minute.
- Pour in the white wine and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pot.
- Add the diced tomatoes and chicken broth, then return the chicken pieces to the pot.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for 45 minutes, stirring occasionally.
- Once the chicken is tender and the sauce has thickened, adjust the seasoning with salt and pepper if needed.
- Garnish with chopped fresh parsley before serving.
