Ingredients

  • 1 whole chicken, about 3-4 pounds
  • 2 onions, sliced
  • 4 garlic cloves, minced
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • 1/2 cup dry white wine
  • 1/4 cup chicken broth
  • 2 teaspoons dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the chicken and pat dry with paper towels. Season the chicken with salt, pepper, and dried thyme, both inside and out.
  3. In a roasting pan, place the sliced onions and minced garlic. Drizzle with olive oil and toss to coat.
  4. Place the seasoned chicken on top of the onion and garlic mixture in the roasting pan.
  5. In a small bowl, mix the lemon juice, white wine, and chicken broth. Pour this mixture over the chicken.
  6. Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
  7. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
