Ingredients
- 1 whole chicken, about 3-4 pounds
- 2 onions, sliced
- 4 garlic cloves, minced
- 1 lemon, juiced
- 1/4 cup olive oil
- 1/2 cup dry white wine
- 1/4 cup chicken broth
- 2 teaspoons dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the chicken and pat dry with paper towels. Season the chicken with salt, pepper, and dried thyme, both inside and out.
- In a roasting pan, place the sliced onions and minced garlic. Drizzle with olive oil and toss to coat.
- Place the seasoned chicken on top of the onion and garlic mixture in the roasting pan.
- In a small bowl, mix the lemon juice, white wine, and chicken broth. Pour this mixture over the chicken.
- Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
- Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
