Ingredients
- 4 chicken breasts
- 1/4 cup orange juice
- 1/4 cup lime juice
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 bunch of cilantro, chopped
Instructions
- In a bowl, mix together the orange juice, lime juice, minced garlic, cumin, paprika, salt, and pepper.
- Add the chicken breasts to the marinade, making sure they are fully coated. Let them marinate for at least 30 minutes in the refrigerator.
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the excess marinade.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked.
- In a separate pan, heat the vegetable oil over medium heat. Add the sliced onion and bell peppers, cooking until they are tender.
- Serve the grilled chicken topped with the sautéed onions and bell peppers, and garnish with chopped cilantro.
