Pollo Asado Guanacasteco (guanacaste Grilled Chicken)

Ingredients

  • 4 chicken breasts
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 bunch of cilantro, chopped

Instructions

  1. In a bowl, mix together the orange juice, lime juice, minced garlic, cumin, paprika, salt, and pepper.
  2. Add the chicken breasts to the marinade, making sure they are fully coated. Let them marinate for at least 30 minutes in the refrigerator.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the excess marinade.
  5. Grill the chicken for 6-7 minutes on each side, or until fully cooked.
  6. In a separate pan, heat the vegetable oil over medium heat. Add the sliced onion and bell peppers, cooking until they are tender.
  7. Serve the grilled chicken topped with the sautéed onions and bell peppers, and garnish with chopped cilantro.
