Pollo Azteca

Ingredients
- 4 boneless, skinless chicken breasts
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Season the chicken breasts with salt, pepper, cumin, and chili powder.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes on each side, or until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the diced onion, garlic, and red bell pepper. Cook for 3-4 minutes, or until the vegetables are softened.
- Add the diced tomatoes, chicken broth, paprika, and any remaining cumin and chili powder. Stir to combine.
- Return the chicken to the skillet and spoon the sauce over the top. Reduce the heat to medium-low, cover, and simmer for 20-25 minutes.
- Serve the pollo azteca hot, garnished with fresh cilantro and a side of rice or tortillas.
