Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the chicken breasts with salt, pepper, cumin, and chili powder.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes on each side, or until browned and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the diced onion, garlic, and red bell pepper. Cook for 3-4 minutes, or until the vegetables are softened.
  4. Add the diced tomatoes, chicken broth, paprika, and any remaining cumin and chili powder. Stir to combine.
  5. Return the chicken to the skillet and spoon the sauce over the top. Reduce the heat to medium-low, cover, and simmer for 20-25 minutes.
  6. Serve the pollo azteca hot, garnished with fresh cilantro and a side of rice or tortillas.
