Ingredients

  • 2 lbs chicken thighs, bone-in and skin-on

  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Season the chicken thighs with salt, pepper, cumin, and paprika.
  2. In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the onion, bell pepper, and garlic. Cook until the vegetables are softened, about 5 minutes.
  4. Stir in the rice and cook for 2 minutes, stirring constantly.
  5. Add the chopped tomatoes and chicken broth to the skillet. Bring to a boil.
  6. Return the chicken thighs to the skillet, nestling them into the rice mixture.
  7. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
  8. Remove from heat and let it rest for 5 minutes before serving.
