Ingredients
- 2 lbs chicken thighs, bone-in and skin-on
- 1 cup long-grain white rice
- 1 onion, chopped
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Season the chicken thighs with salt, pepper, cumin, and paprika.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the onion, bell pepper, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Stir in the rice and cook for 2 minutes, stirring constantly.
- Add the chopped tomatoes and chicken broth to the skillet. Bring to a boil.
- Return the chicken thighs to the skillet, nestling them into the rice mixture.
- Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Remove from heat and let it rest for 5 minutes before serving.
