Ingredients

  • 4 chicken breasts, boneless and skinless
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until translucent. Add the minced garlic and cook for another minute.
  4. Add the diced tomatoes, cocoa powder, chili powder, cumin, oregano, salt, and pepper. Stir to combine and cook for 2-3 minutes.
  5. Pour in the chicken broth and return the chicken breasts to the skillet. Bring to a simmer, cover, and cook for 20-25 minutes, or until the chicken is cooked through.
  6. Sprinkle with chopped cilantro before serving.
