Ingredients
- 4 chicken breasts, boneless and skinless
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 cup chicken broth
- 2 tablespoons chopped fresh cilantro
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until translucent. Add the minced garlic and cook for another minute.
- Add the diced tomatoes, cocoa powder, chili powder, cumin, oregano, salt, and pepper. Stir to combine and cook for 2-3 minutes.
- Pour in the chicken broth and return the chicken breasts to the skillet. Bring to a simmer, cover, and cook for 20-25 minutes, or until the chicken is cooked through.
- Sprinkle with chopped cilantro before serving.
