Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded Mexican cheese blend
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup sour cream
  • 1/4 cup sliced jalapenos (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix the chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Rub the spice mixture over the chicken breasts.
  4. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  5. Add the chicken breasts and cook for 3-4 minutes on each side, until browned.
  6. Remove the skillet from the heat and sprinkle the shredded cheese over the chicken.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
