Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded Mexican cheese blend
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup sour cream
- 1/4 cup sliced jalapenos (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix the chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Rub the spice mixture over the chicken breasts.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken breasts and cook for 3-4 minutes on each side, until browned.
- Remove the skillet from the heat and sprinkle the shredded cheese over the chicken.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove from the oven and let it rest for a few minutes.
- Top the chicken with cilantro, tomatoes, red onion, sour cream, and jalapenos, if desired.
