Pollo Kaq Ik (kaq Ik Chicken)
Pollo Kaq Ik, also known as Kaq Ik Chicken, is a traditional Guatemalan dish that is rich in flavor and history. This spicy and aromatic chicken stew is a staple in Mayan cuisine and is often served during special occasions and celebrations.
Ingredients
- 3 lbs chicken, cut into pieces
- 4 tomatoes, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 dried guaque chilies
- 1 tsp achiote paste
- 1 tsp dried oregano
- 1/2 tsp cumin
- Salt and pepper to taste
- 4 cups chicken broth
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chicken pieces and brown them on all sides, then remove from the pot and set aside.
- In the same pot, add the chopped tomatoes, onion, and garlic. Cook until the vegetables are soft.
- Add the achiote paste, dried oregano, cumin, and salt and pepper. Stir to combine.
- Return the browned chicken pieces to the pot and add the dried guaque chilies and chicken broth.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the chicken is cooked through and the flavors have melded together.
- Serve the Pollo Kaq Ik hot, accompanied by rice and tortillas.
