Pollo Kaq Ik (kaq Ik Chicken)

Ingredients

  • 3 lbs chicken, cut into pieces
  • 4 tomatoes, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 dried guaque chilies
  • 1 tsp achiote paste
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chicken pieces and brown them on all sides, then remove from the pot and set aside.
  3. In the same pot, add the chopped tomatoes, onion, and garlic. Cook until the vegetables are soft.
  4. Add the achiote paste, dried oregano, cumin, and salt and pepper. Stir to combine.
  5. Return the browned chicken pieces to the pot and add the dried guaque chilies and chicken broth.
  6. Bring the stew to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the chicken is cooked through and the flavors have melded together.
  7. Serve the Pollo Kaq Ik hot, accompanied by rice and tortillas.
