Ingredients
- 1 lb boneless, skinless chicken thighs, cut into small cubes
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1/2 cup roasted peanuts
- 2-3 Peruvian yellow peppers, thinly sliced
- 1 red bell pepper, diced
- 4-5 green onions, chopped
- 1 teaspoon Sichuan peppercorns
- 1 teaspoon sugar
- 1 teaspoon sesame oil
Instructions
- In a bowl, mix the soy sauce, rice vinegar, and cornstarch. Add the chicken cubes and marinate for 10 minutes.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the marinated chicken and stir-fry until cooked through. Remove the chicken from the wok and set aside.
- In the same wok, add the garlic, ginger, and Sichuan peppercorns. Stir-fry for a minute until fragrant.
- Add the Peruvian yellow peppers, red bell pepper, and roasted peanuts to the wok. Stir-fry for another 2-3 minutes.
- Return the cooked chicken to the wok. Add the green onions, sugar, and sesame oil. Stir-fry for an additional 2 minutes.
- Transfer the Pollo Kung Pao to a serving dish and garnish with additional chopped green onions and peanuts if desired.
