Ingredients

  • 4 boneless, skinless chicken breasts, cut into cubes
  • 2 tablespoons soy sauce
  • 1 tablespoon Szechuan peppercorns
  • 1 tablespoon brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 green onions, chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix the soy sauce, Szechuan peppercorns, brown sugar, sesame oil, garlic, and ginger. Add the chicken cubes to the marinade and let it sit for 10 minutes.
  2. Heat the vegetable oil in a large pan over medium-high heat. Add the marinated chicken cubes and cook until browned and cooked through, about 8-10 minutes.
  3. Remove the chicken from the pan and set aside. In the same pan, add the sliced bell peppers and onion. Cook for 3-4 minutes until slightly softened.
  4. Return the cooked chicken to the pan with the vegetables. Stir in the green onions and cook for an additional 2 minutes.
  5. Season with salt and pepper to taste. Serve the Pollo Piman hot with steamed rice or noodles.
