Pollo Piman (szechuan Pepper Chicken)

Ingredients
- 4 boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons soy sauce
- 1 tablespoon Szechuan peppercorns
- 1 tablespoon brown sugar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 green onions, chopped
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, mix the soy sauce, Szechuan peppercorns, brown sugar, sesame oil, garlic, and ginger. Add the chicken cubes to the marinade and let it sit for 10 minutes.
- Heat the vegetable oil in a large pan over medium-high heat. Add the marinated chicken cubes and cook until browned and cooked through, about 8-10 minutes.
- Remove the chicken from the pan and set aside. In the same pan, add the sliced bell peppers and onion. Cook for 3-4 minutes until slightly softened.
- Return the cooked chicken to the pan with the vegetables. Stir in the green onions and cook for an additional 2 minutes.
- Season with salt and pepper to taste. Serve the Pollo Piman hot with steamed rice or noodles.
