Ingredients
- 1 lb chicken breast, cut into strips
- 2 tablespoons soy sauce
- 1 tablespoon vinegar
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 red onion, sliced
- 2 tomatoes, cut into wedges
- 1 yellow chili pepper, thinly sliced
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 2 tablespoons vinegar
- 1/4 cup cilantro, chopped
- Salt to taste
- 4 cups cooked white rice
Instructions
- In a bowl, marinate the chicken strips with soy sauce, vinegar, cumin, paprika, and black pepper for 15 minutes.
- Heat vegetable oil in a large skillet over high heat. Add the marinated chicken and cook until browned. Remove the chicken from the skillet and set aside.
- In the same skillet, sauté the red onion, tomatoes, yellow chili pepper, and garlic until the vegetables are tender-crisp.
- Return the cooked chicken to the skillet. Add soy sauce, vinegar, and cilantro. Stir-fry for a few more minutes until everything is well combined.
- Season with salt to taste and serve the pollo saltado over cooked white rice.
