Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon Szechuan peppercorns
- 1 tablespoon aji amarillo paste
- 1 tablespoon vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 teaspoon sugar
- 1/2 cup chicken broth
- 2 green onions, chopped (for garnish)
- Cooked white rice, for serving
Instructions
- In a bowl, marinate the chicken with soy sauce, rice vinegar, and Szechuan peppercorns. Let it sit for 10 minutes.
- Heat the vegetable oil in a large skillet over high heat. Add the marinated chicken and cook until browned, about 5 minutes.
- Add the aji amarillo paste, bell peppers, onion, garlic, ginger, and sugar to the skillet. Stir-fry for 3-4 minutes.
- Pour in the chicken broth and simmer for 5 minutes, or until the chicken is cooked through and the sauce has thickened.
- Remove from heat and garnish with chopped green onions.
- Serve the Pollo Sichuan Estilo Peruano over cooked white rice.
