Ingredients

  • 1 tablespoon aji amarillo paste
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon sugar
  • 1/2 cup chicken broth
  • 2 green onions, chopped (for garnish)
  • Cooked white rice, for serving

Instructions

  1. In a bowl, marinate the chicken with soy sauce, rice vinegar, and Szechuan peppercorns. Let it sit for 10 minutes.
  2. Heat the vegetable oil in a large skillet over high heat. Add the marinated chicken and cook until browned, about 5 minutes.
  3. Add the aji amarillo paste, bell peppers, onion, garlic, ginger, and sugar to the skillet. Stir-fry for 3-4 minutes.
  4. Pour in the chicken broth and simmer for 5 minutes, or until the chicken is cooked through and the sauce has thickened.
  5. Remove from heat and garnish with chopped green onions.
