Ingredients

  • 4 large bell peppers
  • 1 lb ground meat (beef or pork)
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup beef or vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a large bowl, mix together the ground meat, cooked rice, onion, garlic, diced tomatoes, paprika, salt, and pepper.
  3. Stuff the bell peppers with the meat and rice mixture.
  4. Heat the olive oil in a large pot over medium heat. Place the stuffed peppers in the pot.
  5. Pour the beef or vegetable broth over the peppers.
  6. Cover the pot and simmer for 1 hour, or until the peppers are tender.
  7. Serve the stuffed peppers hot, with a side of mashed potatoes or crusty bread.
