Polos Curry (jackfruit Curry)
Polos Curry, also known as Jackfruit Curry, is a popular Sri Lankan dish that is bursting with flavors. This vegan curry is made with tender jackfruit pieces cooked in a rich and aromatic coconut milk gravy, making it a hearty and satisfying meal.
Ingredients
- 2 cups of jackfruit, cut into chunks
- 1 onion, finely chopped
- 2-3 green chilies, sliced
- 1 sprig of curry leaves
- 1-inch piece of cinnamon stick
- 1 teaspoon of mustard seeds
- 1 teaspoon of turmeric powder
- 1 teaspoon of chili powder
- 1 cup of thick coconut milk
- 2 tablespoons of vegetable oil
- Salt to taste
Instructions
- Heat the vegetable oil in a pan and add the mustard seeds. Once they start to splutter, add the onions, green chilies, curry leaves, and cinnamon stick. Sauté until the onions are golden brown.
- Add the jackfruit pieces, turmeric powder, chili powder, and salt. Mix well and cook for a few minutes.
- Pour in the thick coconut milk and simmer for 15-20 minutes until the jackfruit is tender and the gravy thickens.
- Adjust the seasoning and remove from heat.
