Polos Curry, also known as Jackfruit Curry, is a popular Sri Lankan dish that is bursting with flavors. This vegan curry is made with tender jackfruit pieces cooked in a rich and aromatic coconut milk gravy, making it a hearty and satisfying meal.

Polos Curry (jackfruit Curry)

Ingredients

  • 2 cups of jackfruit, cut into chunks
  • 1 onion, finely chopped
  • 2-3 green chilies, sliced
  • 1 sprig of curry leaves
  • 1-inch piece of cinnamon stick
  • 1 teaspoon of mustard seeds
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of chili powder
  • 1 cup of thick coconut milk
  • 2 tablespoons of vegetable oil
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a pan and add the mustard seeds. Once they start to splutter, add the onions, green chilies, curry leaves, and cinnamon stick. Sauté until the onions are golden brown.
  2. Add the jackfruit pieces, turmeric powder, chili powder, and salt. Mix well and cook for a few minutes.
  3. Pour in the thick coconut milk and simmer for 15-20 minutes until the jackfruit is tender and the gravy thickens.
  4. Adjust the seasoning and remove from heat.
