Ingredients

  • 3 cups cooked white rice
  • 1 cup diced pineapple
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped cashews

Instructions

  1. In a large wok or skillet, heat 1 tablespoon of sesame oil over medium-high heat.
  2. Add the diced pineapple, red bell pepper, carrot, and frozen peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  3. Push the vegetables to one side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until they are cooked through.
  4. Add the minced garlic to the wok and stir-fry for 1 minute.
  5. Add the cooked rice to the wok, along with the soy sauce and remaining sesame oil. Stir-fry for 3-4 minutes, mixing everything together.
  6. Remove the wok from the heat and stir in the chopped green onions, cilantro, and cashews.
