Ingredients
- 3 cups cooked white rice
- 1 cup diced pineapple
- 1 red bell pepper, diced

- 1/2 cup frozen peas
- 3 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/4 cup chopped cashews
Instructions
- In a large wok or skillet, heat 1 tablespoon of sesame oil over medium-high heat.
- Add the diced pineapple, red bell pepper, carrot, and frozen peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Push the vegetables to one side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until they are cooked through.
- Add the minced garlic to the wok and stir-fry for 1 minute.
- Add the cooked rice to the wok, along with the soy sauce and remaining sesame oil. Stir-fry for 3-4 minutes, mixing everything together.
- Remove the wok from the heat and stir in the chopped green onions, cilantro, and cashews.
