Polynesian Pineapple Upside-down Cake

Ingredients
- 1/2 cup unsalted butter, melted
- 1 cup packed brown sugar
- 1 can (20 oz) pineapple slices, drained
- Maraschino cherries
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 eggs
Instructions
- Preheat the oven to 350°F (175°C).
- In a 9x9 inch baking dish, pour the melted butter and sprinkle the brown sugar evenly over the bottom.
- Arrange the pineapple slices on top of the brown sugar, and place a cherry in the center of each slice.
- In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
- Add the milk, vegetable oil, vanilla extract, and eggs to the dry ingredients, and mix until smooth.
- Pour the batter over the pineapple slices in the baking dish.
- Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool for 5 minutes, then invert it onto a serving platter.
