Polynesian Pineapple Upside-down Cake

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1 can (20 oz) pineapple slices, drained
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a 9x9 inch baking dish, pour the melted butter and sprinkle the brown sugar evenly over the bottom.
  3. Arrange the pineapple slices on top of the brown sugar, and place a cherry in the center of each slice.
  4. In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt.
  5. Add the milk, vegetable oil, vanilla extract, and eggs to the dry ingredients, and mix until smooth.
