Pom (pom Tacos)
Pom is a traditional Surinamese dish that is a delicious combination of chicken, root vegetables, and pomtayer (a type of taro root). It is typically baked and served as a casserole, but in this recipe, we will be making Pom Tacos, a unique twist on the classic dish.
Ingredients
- 2 lbs chicken thighs, boneless and skinless
- 2 lbs pomtayer (taro root), grated
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced
- 1 cup tomato paste
- 1 cup chicken broth
- 2 tbsp brown sugar
- 2 tbsp lime juice
- 1 tsp cayenne pepper
- 1 tsp ground cumin
- 1 tsp ground allspice
- Salt and pepper to taste
- 8 taco shells
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the grated pomtayer, onion, garlic, bell pepper, tomato paste, chicken broth, brown sugar, lime juice, cayenne pepper, cumin, allspice, salt, and pepper. Mix well.
- Place the chicken thighs in a single layer in a baking dish. Season with salt and pepper.
- Pour the pomtayer mixture over the chicken, spreading it evenly.
- Cover the baking dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and crispy.
- While the pom is baking, heat the taco shells according to package instructions.
- Once the pom is done, remove it from the oven and let it cool for a few minutes.
- Shred the chicken using two forks and mix it into the pom mixture.
- Divide the pom chicken mixture among the taco shells.
- Serve the Pom Tacos with your favorite toppings and enjoy!
