Pom (spicy Pom)
Pom is a traditional Surinamese dish that is a flavorful and spicy casserole made with root vegetables and chicken. It is a popular dish in Surinamese cuisine and is perfect for a comforting and satisfying meal.
Ingredients
- 3 lbs chicken, cut into pieces
- 4 lbs taro root, peeled and grated
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 2 hot peppers, finely chopped
- 1 cup orange juice
- 1 cup chicken broth
- 2 tbsp tomato paste
- 2 tbsp brown sugar
- 1 tsp ground cumin
- 1 tsp ground nutmeg
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Season the chicken pieces with salt, pepper, cumin, and nutmeg.
- In a large bowl, mix the grated taro root, onions, tomatoes, garlic, hot peppers, orange juice, chicken broth, tomato paste, and brown sugar.
- Layer half of the taro mixture in a large baking dish, then arrange the seasoned chicken pieces on top.
- Cover the chicken with the remaining taro mixture.
- Cover the baking dish with aluminum foil and bake for 1.5 hours.
- Remove the foil and bake for an additional 30 minutes, or until the top is golden brown and the chicken is cooked through.
