Pomdete Farcis, also known as Haitian Style Stuffed Potatoes, is a delicious and flavorful dish that is perfect for a hearty meal or as a side dish. The combination of seasoned ground meat and creamy potatoes makes this a satisfying and comforting dish.
Ingredients
- 4 large potatoes
- 1 lb ground beef
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
- 1/4 cup tomato paste
- 1/4 cup water
- 1/4 cup chopped parsley
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Wash and scrub the potatoes, then pierce them with a fork and place them on a baking sheet. Bake for 45-50 minutes, or until tender.
- In a large skillet, heat the olive oil over medium heat. Add the onions, garlic, and bell pepper, and cook until softened.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the thyme, paprika, salt, and pepper. Then add the tomato paste and water, and simmer for 10 minutes.
- Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin layer of potato inside the skin.
- Mash the scooped-out potato flesh and mix it with the cooked ground beef mixture and chopped parsley.
- Stuff the potato skins with the meat and potato mixture, then place them back on the baking sheet.
- Bake for an additional 15-20 minutes, or until the tops are golden brown.
- Serve the Pomdete Farcis hot and enjoy!
