Ingredients
- 1 head of cabbage, shredded
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 10 oz (300g) mushrooms, sliced
- 4 cups vegetable broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion until translucent.
- Add the cabbage, carrots, and potatoes to the pot and cook for 5 minutes.
- Add the mushrooms, vegetable broth, and bay leaves. Season with salt and pepper.
- Cover and simmer for 1 hour, stirring occasionally.
- Remove the bay leaves before serving.
