Ingredients

  • 6 large potatoes, peeled and thinly sliced
  • 200g bacon, diced
  • 2 onions, thinly sliced
  • 4 eggs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, cook the bacon until crispy. Remove from the skillet and set aside.
  3. In the same skillet, sauté the onions until they are soft and translucent. Remove from the heat and set aside.
  4. In a greased baking dish, layer half of the sliced potatoes, followed by half of the cooked bacon and onions. Season with salt and pepper.
  5. Repeat the layers with the remaining potatoes, bacon, and onions.
  6. In a bowl, beat the eggs and pour them over the layered potatoes, bacon, and onions.
  7. Cover the baking dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15 minutes or until the top is golden brown.
  8. Let the pie cool for a few minutes before slicing and serving.
