Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups chicken or vegetable broth
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound mixed wild mushrooms (such as porcini, chanterelle, or oyster), cleaned and sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet or wide saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3 minutes.
  2. Add the sliced mushrooms to the skillet and cook until they release their liquid and become golden brown, about 8-10 minutes. Season with salt and pepper to taste.
  3. Meanwhile, in a separate pot, bring the broth to a simmer. Keep it warm over low heat.
  4. Add the Arborio rice to the skillet with the mushrooms and stir to coat the rice with the oil and mushroom flavors. Cook for 1-2 minutes.
  5. Pour in the white wine and cook, stirring constantly, until the liquid is absorbed.
  6. Begin adding the warm broth to the rice, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding the next. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
  7. Stir in the butter and grated Parmesan cheese until melted and well combined. Season with additional salt and pepper if needed.
  8. Remove the risotto from the heat and let it rest for a few minutes before serving.
