Pomeranian Risotto z grzybami (Pomeranian Mushroom Risotto) is a traditional dish from the Pomeranian region of Poland. This creamy and flavorful risotto is made with locally foraged wild mushrooms, giving it a unique and earthy taste.
Ingredients
- 1 1/2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 1/4 cup unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 pound mixed wild mushrooms (such as porcini, chanterelle, or oyster), cleaned and sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large skillet or wide saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3 minutes.
- Add the sliced mushrooms to the skillet and cook until they release their liquid and become golden brown, about 8-10 minutes. Season with salt and pepper to taste.
- Meanwhile, in a separate pot, bring the broth to a simmer. Keep it warm over low heat.
- Add the Arborio rice to the skillet with the mushrooms and stir to coat the rice with the oil and mushroom flavors. Cook for 1-2 minutes.
- Pour in the white wine and cook, stirring constantly, until the liquid is absorbed.
- Begin adding the warm broth to the rice, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding the next. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
- Stir in the butter and grated Parmesan cheese until melted and well combined. Season with additional salt and pepper if needed.
- Remove the risotto from the heat and let it rest for a few minutes before serving.
