Ingredients

  • 500g puff pastry
  • 500g mixed mushrooms, sliced
  • 200g cheese, grated
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  3. Add the sliced mushrooms to the pan and cook until they release their liquid and become golden brown. Season with thyme, salt, and pepper.
  4. Roll out the puff pastry and place it in a tart pan. Prick the base with a fork.
  5. Sprinkle half of the grated cheese over the pastry base.
  6. Spoon the cooked mushrooms and onion mixture over the cheese.
  7. Top with the remaining grated cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for a few minutes before slicing and serving.
