Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 1/4 cup ice water
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 pound mixed mushrooms, such as cremini and shiitake, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 2 eggs

Instructions

  1. In a large bowl, combine the flour and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, tossing with a fork until the dough comes together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  5. Add the sliced mushrooms, garlic, and thyme to the skillet. Cook until the mushrooms are tender and any liquid has evaporated, about 10 minutes. Season with salt and pepper.
  6. In a small bowl, whisk together the sour cream and eggs. Season with salt and pepper.
  7. Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim any excess. Prick the bottom of the crust with a fork.
  8. Spoon the mushroom mixture into the tart shell. Pour the sour cream mixture over the mushrooms.
  9. Bake the tart for 30-35 minutes, or until the crust is golden and the filling is set.
  10. Let the tart cool for a few minutes before slicing and serving.
