Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup water
  • 2 cups pitted cherries
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unsalted butter
  • 1/2 cup sour cream (for serving)

Instructions

  1. In a large bowl, mix the flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms. Knead the dough on a floured surface until smooth. Cover and let rest for 30 minutes.
  2. While the dough is resting, in a separate bowl, mix the cherries, sugar, and vanilla extract.
  3. Roll out the dough on a floured surface and cut into circles using a cookie cutter or a glass. Place a spoonful of the cherry mixture in the center of each circle. Fold the dough over the filling and press the edges to seal.
  4. In a large pot of boiling water, cook the pierogi in batches for 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and place on a plate.
  5. In a skillet, melt the butter over medium heat. Add the cooked pierogi and sauté until lightly browned.
  6. Serve the pierogi with a dollop of sour cream.
