Pomeranian Pierogi z czereśniami, also known as Pommy Cherry Pierogi, is a traditional dish from the Pomeranian cuisine that combines the sweetness of cherries with the savory goodness of pierogi dough.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup water
- 2 cups pitted cherries
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup unsalted butter
- 1/2 cup sour cream (for serving)
Instructions
- In a large bowl, mix the flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms. Knead the dough on a floured surface until smooth. Cover and let rest for 30 minutes.
- While the dough is resting, in a separate bowl, mix the cherries, sugar, and vanilla extract.
- Roll out the dough on a floured surface and cut into circles using a cookie cutter or a glass. Place a spoonful of the cherry mixture in the center of each circle. Fold the dough over the filling and press the edges to seal.
- In a large pot of boiling water, cook the pierogi in batches for 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and place on a plate.
- In a skillet, melt the butter over medium heat. Add the cooked pierogi and sauté until lightly browned.
- Serve the pierogi with a dollop of sour cream.
