Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
- 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)
- 1 teaspoon vanilla extract
- 4-5 ripe plums, pitted and sliced
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
- In a large bowl, combine the flour, granulated sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- In a small bowl, prepare the flax egg by mixing the ground flaxseed and water. Let it sit for 5 minutes to thicken.
- Add the flax egg and vanilla extract to the flour mixture, and mix until the dough comes together.
- Press two-thirds of the dough into the bottom of the prepared baking pan to form the base.
- In another bowl, toss the sliced plums with the brown sugar and cinnamon. Spread the plum mixture over the dough in the pan.
- Crumble the remaining dough over the plum layer, covering it evenly.
- Bake in the preheated oven for 40-45 minutes, or until the top is golden brown.
- Allow the bars to cool in the pan before cutting into squares and serving.
