Ingredients

  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)
  • 1 teaspoon vanilla extract
  • 4-5 ripe plums, pitted and sliced
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  2. In a large bowl, combine the flour, granulated sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. In a small bowl, prepare the flax egg by mixing the ground flaxseed and water. Let it sit for 5 minutes to thicken.
  4. Add the flax egg and vanilla extract to the flour mixture, and mix until the dough comes together.
  5. Press two-thirds of the dough into the bottom of the prepared baking pan to form the base.
  6. In another bowl, toss the sliced plums with the brown sugar and cinnamon. Spread the plum mixture over the dough in the pan.
  7. Crumble the remaining dough over the plum layer, covering it evenly.
  8. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown.
  9. Allow the bars to cool in the pan before cutting into squares and serving.
